Yubeshi is a Japanese confectionery made with yuzu or walnuts. Originally it was made as a preserved or portable food rather than confectionery. There are many variation of yubeshi by regions.
Ingredients
1: Rice flour … 100g
2: Water … 130ml
3: Soy sauce … 3 tsp
4: Honey 3 tsp
5: Brown sugar … 820g
6: Walnuts … 50g
01 Finely chop walnuts with knife.
02 Place ingredients except walnuts in a microwaveable container and mix well. Loosely cover with cling wrap and heat for 4 minutes at 500w.Stir well with wooden spoon. Loosely cover with cling wrap and heat for 1 minute. Once the dough has a translucent colour, it is almost done. If not, heat a little longer. Mix in the walnuts and heat for 30 secs. Cover a shallow tray with potato starch and place the mixture in the tray.
03 Turn the mixture upside down and either make it flat or into a bar. Once cooled, cut into desired size.
